flatpak repo cannot be hosted on GitHub so I do not think that a flatpak build can be incorporated into the current Jackett pipelines stream.
a single-file bundle could be put on GitHub as a release, but we already have 10 single-file bundle packages, and I'd rather not add to that list, pipelines takes long enough as it is to generate release packages, and as a free repo we have restrictions on the amount of runs and resources used per period, exceeding them causes builds to stop. Besides bundles have drawbacks compared to repositories, according to the flatpak FAQ.
The best option would be to get the app on Flathub via some process that could be triggered from the release of Jackett on this GitHub, but that is outside of my area of expertise so someone else can comment on the viability and suitability of such a method.

Nowadays Flatpak is becoming the new standar method in Linux to install packages, but Jackett doesn't offer it.

It would facilitate a lot the installation if Jackett would provide a Flatpak package, and even better if it would be officially uploaded to Flathub
