Is your feature request related to a problem? Please describe.
When starting a server via CLI we can set log level to DEBUG with --debug. When using the docker images (either self built or just pulled from the hub) we can't set it and it's really hard to debug 500s that appear.

Describe the solution you'd like
Setting the log level via an environment variable to be able to just pull latest image from hub and deploy it.

Describe alternatives you've considered
Couldn't think of any that doesn't include forking the repo.
